Chunky Granola Recipe
This makes a big batch of about 30 servings!
Granola Ingredients:
-
20 Ounces of roasted nuts
-
2/3 Cup of chia seeds
-
2/3 Cup of flax seeds
-
1/2 Cup of chocolate protein powder
-
1.5 Cups of (dark) chocolate chips
-
1/2 Banana
-
1/3 Cup of (raw) honey
-
1 to 3 Tablespoons of water
Granola Directions:
Step 1
Preheat oven to 320-degrees Fahrenheit (160-degrees celsius).
And get the rest of your ingredients together!
Step 2
Lightly pulse the roasted nuts in a blender or food processor until they resemble small pebbles.
Do not blend then into a fine dust. You want to keep them chunky.
I guess you can think of the same size as asphalt stones.
Step 3
In a large bowl... mix the nuts, flax and chia seeds, and chocolate chips together.
In (another) small bowl... blend together the banana, honey, and 1 tablespoon of water.
Add the honey mix to the nuts and stir.
If it's dry, add 1 to 2 tablespoons of water (one at a time) until it mix is lightly sticky and dough-like in texture.
Step 4
Line a baking sheet with parchment.
Press the granola mix onto the sheet until the granola roughly a half inch thick.
The thinner you make it the crunchier it will get... you can experiment... but keep in mind the thickness will change the baking time.
Step 5
Bake for 10 minutes.
Rotate the baking sheet and bake for another 13 minutes.
Turn off the oven, crack the oven door and let the granola sit and cool for 20-30 minutes.
Step 6
Break the granola up into chunks... as big as you prefer them to be.
Store in an air tight container in the refrigerator for up to 2 weeks.
This granola recipe also freezes really well... just an FYI!
